How European roulette works
One wheel, 37 pockets: the numbers 1 to 36 in alternating red and black, plus a single green zero. The dealer spins the wheel one way and the ball the other, and the ball settles in one pocket. Bets are placed on the felt before the spin closes, and every bet is simply a set of pockets you have claimed.
That framing is the whole game. A straight-up bet claims one pocket out of 37 and pays 35 to 1. A red bet claims 18 pockets and pays 1 to 1. In both cases you are being paid as though the zero did not exist, and the gap between "36 pockets" and "37 pockets" is the house edge — 2.70%, identical on every bet on the table.
A round, step by step

Why every row shows 2.70%. Each payout is set as if the wheel had 36 pockets: 36 ÷ numbers covered − 1. A street covers 3 numbers, so it pays 36 ÷ 3 − 1 = 11 to 1. Because the real wheel has 37 pockets, every bet returns 36/37 of what it should — 1 − 36/37 = 2.70%.
What to do with that
Since the edge is fixed, the only decisions that change your experience are bet size and bet spread. A straight-up player and a red/black player lose the same 2.70% of turnover on average, but the straight-up player's results swing wildly around it while the red/black player's grind steadily downward. Neither is smarter; they are different rides at the same price.
